One person ends up floating hundreds of dollars. The group chat goes silent when payment reminders get sent. Some people don't attend every activity but get charged anyway. And the organiser — who already did all the work — is now also the debt collector.
The fairest approach — everyone pays for exactly what they do. If someone skips the spa but does the bottomless brunch, they pay accordingly. If someone can't make the Friday dinner but joins Saturday, they're not charged for the night they missed.
